long time no see… Well, here is the reason why:
In October I found a cute vintage tea house in the area and somehow decided it was time for a change. Before I applied there, I worked for one of the biggest organic retailers as a chef. I liked the job, but it was a little boring for me and I missed creating my own dishes. So the tea house sounded like the perfect opportunity to go back to the invention side of cooking – unfortunately I’ve been lied to on numerous occasions and had to change jobs again within six weeks. Now I’m part of the pastry section of said retailer and have weekends off. I. HAVE. WEEKENDS. OFF. If you’re a chef too, you know what enormous gift that is after ten years of working weekends. I’m overly excited.
I’m currently getting up at five am and no amount of coffee in the world can change, that I will never accept that as a normal time to get up in the morning. The downside of this is that I crave sweets all the time. I don’t want to constantly buy chocolate or ice cream, so I created a quick, sweet and zingy sorbet from just 3-4 ingredients.
As a base, choose the frozen berries you like. I tend to choose mixed berries, as I love the taste and variety of flavours. Also, the colour turns out absolutely gorgeous, but thats obviously not the point, is it?
For your sorbet you’ll need, per portion:
250g frozen berries
50ml of yoghurt – works with any kind of yoghurt, I love the alpro soy yoghurt
a good splash of liquid sweetener or brown rice syrup
a splash of vanilla essence or fresh vanilla OR some lime zest
Throw all the ingredients into a blender – or use a stick blender. If you’re gonna use a stick blender, add a couple of tablespoons of water, as it makes the mixture a little smoother. Don’t overmix it, as the blenders get warm and melt your sorbet.
And that’s pretty much it – with some granola or nuts or even more fruit you can easily turn this into a breakfast bhudda bowl. Well, I cant, since my husband recently installed a coffee maker linked to our echo dot, because I am not capable to get up five minutes earlier. Thinking about it, I should probably publish a few meal prep options, so I have to make them…
